They're easy to make and can be customized with your favorite toppings, such as butter, maple syrup, whipped cream, or fruit. So why wait? Let's get cooking!

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons butter, melted
  • 1 cup fresh or frozen blueberries

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate mixing bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Gently fold in the blueberries.
  5. Heat a large nonstick skillet or griddle over medium heat. Lightly coat with cooking spray or brush with a little oil.
  6. Scoop about 1/4 cup of the pancake batter onto the skillet for each pancake.
  7. Cook the pancakes for 2-3 minutes, until bubbles form on the surface and the edges start to look dry. Flip the pancakes and cook for an additional 1-2 minutes, until golden brown.
  8. Repeat with the remaining batter, adding more cooking spray or oil to the skillet as needed.
  9. Serve the pancakes warm, topped with butter and maple syrup. Enjoy!
The combination of fluffy, tender pancakes and juicy, bursting blueberries is simply irresistible.

Optional variations

  • For a lighter, fluffier texture, you can use buttermilk in place of the milk.
  • For added flavor, try adding a teaspoon of vanilla extract or a pinch of cinnamon to the batter.
  • If you don't have fresh or frozen blueberries, you can use dried blueberries or other types of fruit, such as chopped apples or sliced bananas.
  • Accompany the pancakes with a glass of orange juice, or a cup of coffee.
