Fruit and Granola Breakfast Bowl Superfood with a Punch of Flavor

Ingredients

  • 1 banana
  • 1 orange
  • 1/2 cup granola
  • 1/4 cup blueberries
  • 1/4 cup pomegranate seeds
  • 1/4 cup blackberries

  • 1/2 cup orange juice
  • 1/2 cup carrot juice

Instructions

  1. Slice the banana and orange into thin rounds and place them in a bowl.
  2. Add the granola, blueberries, pomegranate seeds, and blackberries on top.
  3. In a separate bowl, mix the apple puree with the cinnamon.
  4. Pour the apple puree over the top of the fruit and granola in the first bowl.
  5. In a blender, blend the orange juice and carrot juice until smooth.
  6. Pour the orange and carrot juice mixture into a separate glass or cup.

TIP: You can make the apple puree yourself by following this simple and easy recipe. You will need:
  • 3-4 medium apples, peeled, cored, and diced
  • 1/4 cup water
  • 1/4 teaspoon cinnamon (optional)
Instructions
  1. Place the diced apples in a saucepan and add the water.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 10-15 minutes, or until the apples are soft and easily mashed.
  3. Remove the saucepan from the heat and use a potato masher or a fork to mash the apples into a puree.
  4. If you'd like to add cinnamon, stir it in at this point.
  5. If the puree is too thick, you can add a little more water to thin it out.
  6. Allow the puree to cool, then transfer it to an airtight container and store it in the refrigerator for up to 5 days, or in the freezer for up to 3 months.
You can also make apple puree in a blender or food processor. Simply blend the cooked, mashed apples until smooth, adding a little water if needed to reach the desired consistency.
