  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 2-4 tablespoons water, to thin
  • Salt, to taste

Instructions

  1. Begin by preparing your vegetables. Wash all fresh produce, peel and cube sweet potatoes, and roast them at 400°F (200°C) for about 25 minutes or until tender.

  2. Arrange the green leaf lettuce at the bottom of the bowl as a bed for your salad.

  3. Neatly place the sliced avocado, shredded cabbage, chickpeas, roasted sweet potatoes, cherry tomatoes, sliced yellow bell pepper, microgreens, and radishes on top of the lettuce in segments, showcasing each color.

  4. To make the dressing, whisk together tahini, lemon juice, maple syrup, and water until you reach a creamy, pourable consistency. Season with salt to your taste.

  5. Drizzle the dressing over the salad bowl just before serving, and toss lightly to coat all ingredients.

  6. Garnish with a sprinkle of sesame seeds, and add a pinch of salt and pepper.
