  •  2 salmon fillets, skin on

Instructions

  1. Start with the risotto. In a pan over medium heat, sauté the onion and garlic in olive oil until translucent.

  2. Add the Arborio rice and toast for 2 minutes. Pour in the wine and stir until absorbed.

  3. Add the stock one ladle at a time, stirring continuously until the rice is cooked but still al dente, about 18 minutes.

  4. Stir in the Parmesan, parsley, and basil. Season with salt and pepper to taste. Keep warm.

  5. For the avocado puree, blend the avocado flesh with lime juice until smooth. Season with salt and pepper.

  6. Heat a skillet over medium-high heat with olive oil. Season the salmon fillets with salt and pepper, and place them skin-side down in the skillet. Cook for 3-4 minutes until the skin is crisp. Flip the salmon and cook for another 2-3 minutes for medium-rare, or until your desired doneness.

  7. To serve, spoon the avocado puree onto the plate, place the salmon fillet on top, and mold a portion of herbed risotto alongside. Garnish with microgreens.
