Hearty Quinoa and Vegetable Bowl - A Satisfying and Healthy Meal for Any Occasion

Ingredients

  •  1 cup quinoa

  • 1 bunch broccoli, cut into florets
  • 1/2 pound brussels sprouts, trimmed and halved
  • 1 medium zucchini, sliced
  • 1 red bell pepper, seeded and cut into bite-sized pieces
  • 1 lime, juiced
  • Optional toppings: cilantro or parsley, chopped

Instructions

  1. Rinse the quinoa in a fine mesh sieve and add it to a medium saucepan with 2 cups of water. Bring to a boil, then reduce the heat to a simmer and cover the pan. Cook the quinoa for about 15-20 minutes, until the water has been absorbed and the quinoa is cooked.

  2. While the quinoa is cooking, bring a large pot of water to a boil. Add the carrots and broccoli and cook for about 3-4 minutes, until tender but still crisp. Using a slotted spoon or tongs, transfer the vegetables to a colander to drain. Repeat the process with the brussels sprouts and zucchini.

  3. In a large bowl, combine the cooked quinoa, cooked vegetables, and red bell pepper. Squeeze the lime juice over the top and toss to coat.

  4. Divide the quinoa and vegetable mixture among bowls and top with chopped cilantro or parsley, if desired. Enjoy!
