Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup water
  • 1/4 cup vegetable oil
  • 1/2 cup diced potatoes
  • 1/2 cup peas
  • 1/2 cup diced carrots
  • 1/2 cup diced onions
  • 1/2 cup diced green bell peppers
  • 1/2 cup diced tomatoes
  • 1/2 cup diced green beans
  • 1 tbsp minced ginger
  • 1 tbsp minced garlic
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp ground turmeric
  • 1/2 tsp red chili powder
  • Salt, to taste
  • Oil, for frying
  • Lettuce and red onions, for serving

Instructions

  1. In a large bowl, mix together the flour and salt. Slowly add the water and oil, stirring until a dough forms. Knead the dough for 5-10 minutes until it is smooth and elastic. Cover the dough with a damp cloth and set it aside to rest for 30 minutes.

  2. Meanwhile, heat a little oil in a pan over medium heat. Add the potatoes, peas, carrots, onions, bell peppers, tomatoes, and green beans. Cook, stirring occasionally, until the vegetables are tender, about 10-15 minutes.

  3. Add the ginger, garlic, cumin, coriander, garam masala, turmeric, and red chili powder to the pan. Cook for an additional 2-3 minutes, until the spices are fragrant. Season the filling with salt to taste. Set the filling aside to cool.

  4. Once the dough has rested, divide it into 12 equal pieces. Roll each piece into a ball, then roll it out into a circle about 6 inches in diameter. Cut the circle in half, then roll each half into a cone shape. Fill the cone with about 2 tablespoons of the vegetable filling. Pinch the top of the cone to seal it closed. Repeat with the remaining dough and filling.

  5. Heat about 2 inches of oil in a deep pan over medium heat. When the oil is hot, carefully add a few of the samosas to the pan. Fry the samosas for 2-3 minutes on each side, until they are golden brown. Remove the samosas from the oil with a slotted spoon and drain them on a paper towel. Repeat with the remaining samosas.

  6. Serve the samosas hot, on a plate with lettuce and red onions. Enjoy!
