Ingredients

  • 1 large bunch collard greens (about 1 pound)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped

  • 6 cups vegetable broth
  • 1 tablespoon apple cider vinegar
  • Salt and black pepper, to taste
  • 2 tablespoons brown sugar or maple syrup

Instructions

  1. Prepare the Collard Greens: Wash the collard greens thoroughly under cold water to remove any dirt. Remove the tough stems by cutting along each side of the stem. Chop the leaves into bite-sized pieces.

  2. Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

  3. Add Flavors: Sprinkle in the smoked paprika and red pepper flakes (if using). Cook for an additional 30 seconds to release their flavors.

  4. Simmer Greens: Add the chopped collard greens, stirring well to coat them with the oil and spices. Pour in the vegetable broth, making sure all the greens are submerged. Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for about 45 minutes or until the greens are tender.

  5. Finish with Acidity and Sweetness: Stir in the apple cider vinegar and brown sugar or maple syrup. Season with salt and pepper to taste. Allow the flavors to meld together by letting the mixture cook uncovered for an additional 10 minutes.
