Ingredients

  • For the Filling:

  • 1 cup shiitake mushrooms, finely chopped

  • 200g firm tofu, crumbled

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon soy sauce

  • 1 teaspoon vegan oyster sauce

  • Salt and pepper, to taste

  • Oil for sautéing

  • For the Spring Rolls:

  • 12 lumpia wrappers

  • Vegetable oil for frying

Instructions

  1. Prepare the Filling: Heat a small amount of oil in a pan over medium heat. Add the onions and garlic, sauté until translucent.

  2. Cook Mushrooms and Tofu: Stir in the mushrooms and crumbled tofu to the pan. Cook until the mixture is slightly browned and all moisture has evaporated. Season with soy sauce, vegan oyster sauce, salt, and pepper. Let it cool before using.

  3. Assemble Spring Rolls: Lay out a lumpia wrapper on a flat surface. Place about 2 tablespoons of filling near one edge. Fold in the sides and roll tightly, sealing the edges with water or a little oil if needed. Repeat until all wrappers are filled.

  4. Fry the Lumpiang Shanghai: Heat vegetable oil in a deep pan over medium heat. Fry each spring roll until golden brown on all sides, about 3-5 minutes per side. Drain on paper towels to remove excess oil.

Sweet and Spicy Vinegar Dip

  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon chili flakes or sliced green chilies (optional)

Combine all ingredients in a small bowl, stirring until the sugar dissolves. Serve alongside the spring rolls.
