Ingredients

  • Sauerkraut Base

  • 1 pound (450g) sauerkraut, rinsed and drained

  • 2 tablespoons olive oil or butter

  • 1 large onion, finely chopped

  • 4 cloves garlic, minced

  • 1 cup red wine (optional)

  • Meats

  • 6 ounces (170g) smoked kielbasa sausage, sliced into rounds

  • 6 ounces (170g) fresh Polish-style sausages or pork chops, cubed

  • Salt and pepper, to taste

  • Vegetables

  • 1 large carrot, diced

  • 2 ribs celery, diced

  • 1 apple, peeled, cored, and chopped (optional)

  • Spices & Seasoning

  • 1 bay leaf

  • 1 teaspoon caraway seeds

  • 1 teaspoon dried marjoram or thyme

Instructions

  1. Prepare the Base: In a large pot or Dutch oven over medium heat, warm the olive oil or butter. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and cook for an additional minute, until fragrant.

  2. Cook Meats: Add the sliced kielbasa sausage to the pot, browning it slightly before adding the cubed pork chops or sausages. Season with salt and pepper. Cook until the meats are browned on all sides.

  3. Combine Ingredients: Stir in the rinsed sauerkraut, diced carrot, celery, chopped apple (if using), bay leaf, caraway seeds, and marjoram or thyme. Add the red wine, if using. Mix everything well to combine flavors.

  4. Simmer Slowly: Reduce heat to low, cover the pot with a lid slightly ajar, and let it simmer gently for about 1-2 hours. Stir occasionally, allowing the stew to meld together beautifully as the sauerkraut softens and the flavors deepen.

  5. Adjust Seasoning: Taste and adjust seasoning with additional salt, pepper, or spices if needed. For a richer flavor, you can let Bigos simmer for an extra hour or two on low heat.
