  • 2 teaspoons wattleseed powder
  • Fresh coriander, for garnish

Instructions

  1. Brown the Lamb: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add lamb chunks, season with salt and pepper, and brown on all sides. Remove and set aside.

  2. Sauté Vegetables: In the same pot, add chopped onion and garlic. Sauté until translucent. Stir in carrots and celery, cooking for an additional 5 minutes.

  3. Combine Ingredients: Return lamb to the pot. Add diced tomatoes, beef stock, red wine (if using), bush tomato paste, dried lemon myrtle leaves, and wattleseed powder. Stir well to combine all flavors.

  4. Simmer Stew: Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer gently for about 1.5 to 2 hours or until lamb is tender and flavors are fully developed. Stir occasionally to prevent sticking.
