Ingredients

For the Rolls:
  • 12 rice paper wrappers (bánh tráng)
  • 1 carrot, julienned
  • 1 cucumber, thinly sliced
  • 1 cup fresh bean sprouts
  • 1 red bell pepper, thinly sliced
  • 1 avocado, sliced
  • Fresh mint leaves
  • Fresh cilantro leaves
For the Dipping Sauce:
  • 3 tablespoons fish sauce (or soy sauce for a vegan option)
  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • 1 clove garlic, minced
  • 1 small chili pepper, finely chopped (optional)

Instructions

  1. Prepare the Ingredients: Wash and prepare all vegetables by slicing them into thin strips or julienning as needed. Set aside.

  2. Make the Dipping Sauce: In a small bowl, whisk together fish sauce (or soy sauce), lime juice, sugar, minced garlic, and chopped chili pepper until well combined. Adjust to taste if necessary. Let the sauce sit aside for the flavors to meld.

  3. Soak Rice Paper Wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 5-7 seconds or until it becomes pliable but not too soft. Lay it flat on a clean, damp cloth or cutting board.

  4. Assemble the Rolls: Place a few pieces of each vegetable and herbs in the center of the wrapper, leaving space at the edges. Fold the sides inward over the filling, then roll tightly from bottom to top. Repeat with remaining wrappers and ingredients.

  5. Serve Immediately: Arrange rolls on a platter. Serve alongside dipping sauce for an extra zing of flavor.
