Ingredients

  • 2 medium Japanese eggplants
  • 3 tablespoons white miso paste
  • 1 tablespoon mirin (sweet rice wine)
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • Toasted sesame seeds, for garnish
  • Freshly grated ginger, optional

Instructions

  1. Prepare the Eggplants: Wash and slice the eggplants lengthwise into halves or quarters, depending on their size.

  2. Salt and Drain: Sprinkle salt generously over the cut sides of the eggplant slices. Let them sit for about 15-20 minutes to draw out excess moisture. Rinse under cold water and pat dry with paper towels.

  3. Make the Miso Glaze: In a small bowl, combine white miso paste, mirin, soy sauce, sugar, sesame oil, and grated ginger (if using). Stir until smooth and well combined.

  4. Heat the Grill or Pan: Preheat your grill to medium-high heat or warm a large skillet over medium heat.

  5. Grill the Eggplants: Brush the eggplant slices with a little bit of oil. Place them on the grill or in the pan, cut-side down. Cook for about 4-5 minutes until they have nice char marks and are tender. Flip and cook for another 3-4 minutes.

  6. Apply the Miso Glaze: Brush the miso glaze generously over the cooked eggplant slices while still hot. Allow them to caramelize slightly, which should take about 1-2 minutes on each side.

  7. Garnish and Serve: Transfer the glazed eggplants to a serving plate. Sprinkle with toasted sesame seeds before serving.
