“Hummus: A versatile canvas for creativity and flavor.”

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 3 tablespoons tahini paste
  • Juice of 1 lemon
  • 2 tablespoons olive oil, plus extra for drizzling
  • Salt and pepper, to taste
  • 1 teaspoon ground cumin
Charred Vegetables
  • 1 zucchini, sliced into rounds
  • 1 red bell pepper, cut into quarters
  • 1 yellow onion, sliced
  • Olive oil, for brushing
  • Fresh parsley, chopped (for garnish)
  • A pinch of smoked paprika (optional)

Instructions

  1. Prepare the Hummus: In a food processor, combine chickpeas, garlic, tahini paste, lemon juice, olive oil, cumin, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed. Adjust seasoning to taste.

  2. Warm the Hummus: Transfer the hummus to a saucepan over low heat. Stir occasionally for about 5-7 minutes, or until warmed through. Keep warm while preparing vegetables.

  3. Char the Vegetables: Preheat your grill or stovetop grill pan over medium-high heat. Brush the zucchini rounds, bell pepper quarters, and onion slices with olive oil. Place them on the hot grill and cook for about 4-5 minutes per side, or until nicely charred. Remove from heat and set aside.

  4. Serve and Garnish: Spread the warm hummus onto a serving platter or individual plates. Arrange the charred vegetables on top. Drizzle with extra olive oil, sprinkle with smoked paprika if using, and garnish with chopped parsley.
