Ingredients

  • 1-inch piece of ginger, grated
  • 2 green chilies, slit lengthwise (optional)
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream or coconut milk for a dairy-free option
  • Fresh cilantro leaves, chopped for garnish

Instructions

  1. Marinate the Cauliflower: In a large bowl, mix yogurt, lemon juice, garam masala, cumin, turmeric, chili powder, and salt. Add cauliflower florets to this mixture, ensuring they are well coated. Let it marinate for at least 30 minutes.

  2. Prepare the Base: Heat 1 tablespoon of oil in a large pan over medium heat. Add chopped onions and sauté until golden brown. Stir in minced garlic, grated ginger, and green chilies (if using), cooking until fragrant.

  3. Make the Sauce: Pour crushed tomatoes into the pan with the onion mixture. Simmer for about 5 minutes, allowing it to thicken slightly. Add remaining spices—garam masala, cumin, turmeric, chili powder—and salt to taste. Cook for another 2-3 minutes until well combined.

  4. Cook Cauliflower: In a separate pan, heat the remaining oil over medium-high heat. Add the marinated cauliflower and cook until golden brown on all sides, about 5-7 minutes. Transfer these florets into the tomato sauce mixture.

  5. Simmer to Perfection: Pour heavy cream or coconut milk into the pan with the cauliflower and sauce. Stir well, reduce the heat to low, and let it simmer for about 10-15 minutes until the cauliflower is tender and flavors meld together beautifully.

  6. Garnish and Serve: Remove from heat and garnish with freshly chopped cilantro leaves just before serving.
