Instructions

  3. Cook the Onion Layer: Sprinkle thinly sliced onion over the melted mixture in an even layer. This will become the base for your Tahdig.

  4. Layer the Rice: Drain the soaked rice, then add it to the pot, spreading it evenly over the onions without pressing down. Pour the saffron-infused water gently over the rice and season with salt.

  5. Steam the Rice: Place a clean kitchen towel or cheesecloth at the bottom of the lid to absorb excess moisture. Cover the pot and bring to a boil over medium-high heat, then reduce to low and steam for about 45 minutes, or until the rice is tender.

  6. Create the Tahdig: Once cooked, remove from heat and let it sit covered for an additional 10 minutes. Gently place a large platter over the pot and invert it to release the golden Tahdig onto your serving dish.

  7. Add Herb Topping: Sprinkle fresh herbs evenly over the rice before serving.
