Ingredients

For the Salmon:
  • 4 salmon fillets (6 ounces each)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large fennel bulb, sliced thinly
  • 3 cloves garlic, minced
  • 1 cup dry white wine or chicken broth
  • 1 tablespoon fresh lemon juice
  • ¼ cup chopped fresh dill
For the Couscous:
  • 1 cup couscous
  • 1½ cups hot water or vegetable broth
  • Salt, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides.

  2. Sauté Fennel: In a large skillet over medium heat, warm the olive oil. Add the sliced fennel and sauté until it softens and is lightly golden, about 5 minutes. Stir in the garlic and cook for another minute.

  3. Braise the Salmon: Place the salmon fillets skin-side down in the skillet with the fennel. Pour the white wine or chicken broth over the salmon, cover the skillet, and reduce heat to medium-low. Let it simmer gently for about 15 minutes, or until the salmon is cooked through and flakes easily.

  4. Finish with Lemon & Dill: Remove the lid, stir in the lemon juice, and sprinkle chopped dill over the top of the fillets. Cook uncovered for an additional 2-3 minutes.

  5. Prepare Couscous: While the salmon braises, pour the couscous into a bowl. Add hot water or broth and salt, cover with a plate, and let it sit for about 5 minutes. Fluff with a fork, then stir in olive oil and parsley.
