Prepare the Chicken: In a large pot or Dutch oven over medium heat, warm the olive oil. Add the chicken pieces and season with salt, pepper, paprika, cayenne pepper, and half of the Cajun seasoning. Cook until the chicken is browned on all sides, about 5-7 minutes. Remove from the pot and set aside.
