  • 1 cup shredded Monterey Jack cheese (or Mexican blend)

Instructions

  1. Cook the Chicken: Season chicken breasts with salt and pepper. In a skillet over medium heat, cook until golden brown on both sides and fully cooked through. Let cool slightly before shredding.

  2. Prepare the Chipotle Sauce: In a blender, combine chipotle peppers, adobo sauce, chicken broth, olive oil, and garlic. Blend until smooth.

  3. Assemble the Enchiladas: Preheat oven to 375°F (190°C). Pour about half of the chipotle sauce into a baking dish, spreading it evenly. Dip each tortilla in the remaining sauce, then fill with shredded chicken and sprinkle with cheese. Roll up and place seam-side down in the baking dish.
