Ingredients

  • 4 lb pork shoulder or butt
  • 1/2 cup sea salt
  • 2 tablespoons liquid smoke (optional)
  • 6 cups Hawaiian sea salt (for traditional imu cooking, optional)
For the Electric Slow Cooker:
  • 3 cloves garlic, minced
  • 1 tablespoon Hawaiian sea salt

Instructions

  1. Prepare the Pork: Remove any excess fat from the pork shoulder and pat it dry with paper towels.

  2. Season the Meat: If using an electric slow cooker, mix together minced garlic and Hawaiian sea salt in a small bowl. Rub this mixture all over the pork. For traditional imu cooking, pack the pork tightly in Hawaiian sea salt or use banana leaves if available.

  3. Cook in Slow Cooker: Place seasoned pork in the slow cooker, cover with its lid, and set on low heat for 8-10 hours or until the meat easily shreds with a fork.

  4. Traditional Imu Cooking (Optional): If using an imu, dig a pit, line it with hot rocks from a fire, place a layer of banana leaves, add the pork wrapped in more leaves and Hawaiian sea salt, cover again with leaves and dirt to seal. Cook for 4-6 hours, until tender.

  5. Shred and Serve: Once cooked, remove the pork from the slow cooker or imu. Shred it using two forks, discarding any large pieces of fat.
