Ingredients

For the Rice Layer:
  • 2 cups basmati rice
  • 1/4 cup olive oil, plus more for greasing
  • 3 cups water
  • 1 teaspoon saffron threads
  • Salt to taste
For the Lentil Layer:
  • 1 cup green lentils, rinsed and drained
  • 4 cups vegetable broth or water
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
For Garnishing:
  • Sliced almonds for garnish
  • Toasted pine nuts for garnish (optional)

Instructions

  1. Prepare the Rice: Rinse the basmati rice under cold water until the water runs clear. Soak in warm water for 30 minutes, then drain.

  2. Cook the Lentils: In a large pot, combine lentils with vegetable broth or water and bring to a boil. Reduce heat, cover, and simmer for about 20-25 minutes or until tender but not mushy. Drain any excess liquid and set aside.

  3. Sauté Aromatics: In a skillet, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until translucent. Stir in the ground cumin and coriander, cooking for another minute. Mix this with the cooked lentils along with salt and pepper to taste.

  4. Infuse Saffron: Steep saffron threads in 1/4 cup warm water for about 10 minutes. Strain into a small bowl and set aside.

  5. Assemble the Casserole: Grease a deep baking dish with olive oil. Spread half of the lentil mixture evenly at the bottom. Add the soaked rice on top, followed by the remaining lentils. Pour saffron water over everything, ensuring even distribution. Drizzle 1/4 cup olive oil in concentric circles over the surface.

  6. Bake: Preheat your oven to 350°F (175°C). Cover the dish with aluminum foil and bake for about 45-50 minutes. Remove the foil and increase the temperature to 400°F (200°C), baking for an additional 10-15 minutes until the top is golden brown.
