Ingredients
For the Salmon:
4 salmon fillets (about 6 ounces each)
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
Lingonberry Glaze:
1 cup lingonberries (fresh or frozen)
1/3 cup honey
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
Zest of one lemon
For the Dill Potatoes:
2 pounds baby potatoes, halved
4 tablespoons unsalted butter
3 tablespoons fresh dill, chopped
Salt and freshly ground black pepper, to taste
Instructions
Prepare the Salmon: Preheat your oven to 400°F (200°C). Season the salmon fillets with salt and pepper on both sides.
Make the Lingonberry Glaze: In a small saucepan over medium heat, combine lingonberries, honey, balsamic vinegar, Dijon mustard, and lemon zest. Bring to a gentle simmer, stirring occasionally until the mixture thickens slightly, about 5-7 minutes. Remove from heat.
Cook the Potatoes: Place halved baby potatoes in a large pot of salted water and bring to a boil. Cook for about 15 minutes or until tender. Drain well.
Roast the Salmon: Heat olive oil in an ovenproof skillet over medium-high heat. Sear the salmon fillets, skin-side down if applicable, for 3-4 minutes until golden brown. Remove from heat and brush each fillet generously with the lingonberry glaze. Transfer the skillet to the preheated oven and bake for about 10-12 minutes or until the salmon is cooked through.
Prepare Dill Potatoes: In a large bowl, toss the warm potatoes with melted butter, chopped dill, salt, and pepper. Adjust seasoning as desired.
Serve this exquisite Lingonberry Glazed Salmon over a bed of fluffy dill potatoes for a truly Scandinavian dining experience. The glaze’s sweet-tart flavor beautifully complements the rich salmon, while the dill adds a fresh note to the comforting potatoes. This dish is perfect for any special occasion or when you want to bring a taste of Scandinavia into your home kitchen. Enjoy this culinary journey that celebrates the natural bounty and flavors of Nordic landscapes!
