Instructions

Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until tender but not mushy. Drain any excess liquid and let cool.

  2. Prepare Bulgur Wheat: Place bulgur wheat in a bowl and pour boiling water over it (1:1 ratio). Cover the bowl with plastic wrap or a lid and let it sit for about 15 minutes, or until all the water is absorbed. Fluff with a fork and allow to cool.

  3. Combine Ingredients: In a large mixing bowl, combine cooked lentils, prepared bulgur wheat, diced cucumber, tomatoes, red onion, chopped parsley, and mint.

  4. Make Dressing: In a small bowl, whisk together lemon juice, olive oil, salt, and pepper until well combined. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.

  5. Chill Before Serving: Cover the salad and refrigerate for at least 30 minutes before serving. This allows the flavors to meld beautifully.
