Ingredients
Dough
- 2 cups all-purpose flour, plus extra for dusting

- 1 large egg
- 3/4 cup warm water

- 2 cups chopped spinach, cooked and drained
- 1 cup ricotta cheese

- 1 cup fresh strawberries, diced
- 1/2 cup cottage cheese
- 2 tablespoons sugar or honey
Instructions
Prepare the Dough: In a large bowl, combine flour and salt. Make a well in the center and add egg and warm water. Mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth. Cover with plastic wrap and let rest for 30 minutes.
Make Fillings:
Savory: Melt butter over medium heat, sauté spinach until dry, then mix with ricotta cheese. Season with salt and pepper.
Sweet: Combine strawberries, cottage cheese, and sugar in a bowl.
Roll Out Dough: Divide the dough into quarters. Roll each portion out on a floured surface to about 1/8 inch thickness.
Cut & Fill Pierogi: Use a round cookie cutter or glass to cut circles from the rolled-out dough. Place a spoonful of filling in the center of each circle, fold over and press edges together to seal. Crimp with a fork for decorative edges.
Boil Pierogi: Bring a large pot of salted water to a boil. Add pierogi in batches (do not overcrowd) and cook until they float to the surface, about 3-4 minutes. Remove with a slotted spoon.
