Tzatiki Sauce

  • 1 small cucumber, grated and squeezed to remove excess moisture
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • A pinch of dill (optional)

Instructions

  1. Prepare the Tzatiki Sauce: In a medium bowl, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, salt, pepper, and dill if using. Mix well and set aside in the refrigerator until ready to serve.

  2. Assemble the Wraps: Lay out each tortilla flat on a clean surface. Spread an even layer of hummus across the center of each tortilla.

  3. Add Vegetables: Place cucumber ribbons, carrot strips, bell pepper slices, cherry tomatoes, and feta cheese (if using) over the hummus in each tortilla. Sprinkle with fresh parsley leaves for a burst of color and flavor.

  4. Roll Up the Wraps: Fold in the sides of each tortilla towards the center, then roll up tightly from one end to form a wrap. Secure with toothpicks if necessary.
