Ingredients

  • For the Dressing:

  • Juice of 1 lime

  • 2 tablespoons fish sauce

  • 1 tablespoon honey or agave syrup

  • 1 teaspoon sesame oil

  • 1 clove garlic, minced

Instructions

  1. Marinate the Chicken: In a bowl, combine lemongrass, garlic, lime juice, fish sauce, black pepper, and vegetable oil. Add chicken breasts to the mixture, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.

  2. Prepare the Salad Base: In a large bowl, combine mixed greens, julienned carrot, cucumber ribbons, red onion slices, mint leaves, and cilantro leaves. Set aside.

  3. Make the Dressing: In a small bowl, whisk together lime juice, fish sauce, honey or agave syrup, sesame oil, and minced garlic until well blended. Taste and adjust seasoning if necessary.
