Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
2 stalks lemongrass, finely chopped (white part only)
3 cloves garlic, minced
Juice of 2 limes
1 tablespoon fish sauce
1 teaspoon ground black pepper
1 tablespoon vegetable oil

4 cups mixed greens (such as romaine and butter lettuce)
1 carrot, julienned
1 cucumber, sliced into thin ribbons
1 small red onion, thinly sliced

Fresh cilantro leaves, for garnish
For the Dressing:
Juice of 1 lime
2 tablespoons fish sauce
1 tablespoon honey or agave syrup
1 teaspoon sesame oil
1 clove garlic, minced
Instructions
Marinate the Chicken: In a bowl, combine lemongrass, garlic, lime juice, fish sauce, black pepper, and vegetable oil. Add chicken breasts to the mixture, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.
Prepare the Salad Base: In a large bowl, combine mixed greens, julienned carrot, cucumber ribbons, red onion slices, mint leaves, and cilantro leaves. Set aside.
