Ingredients

  • 1 cup pitted dates (about 150g)
  • 1/2 cup desiccated coconut
  • 1/4 cup raw almonds or cashews, finely chopped
  • 1 tablespoon cocoa powder
  • Pinch of salt
  • 1 teaspoon vanilla extract
Coating
  • 1/2 cup smooth peanut butter (or any nut/seed butter)
  • 3 tablespoons cocoa powder
  • 1 cup desiccated coconut for rolling

Instructions

  1. Prepare the Dates: If your dates are not soft, soak them in warm water for about 10 minutes to soften, then drain.

  2. Blend Ingredients: In a food processor, combine the pitted dates, desiccated coconut, chopped nuts or seeds, cocoa powder, salt, and vanilla extract. Process until the mixture is well combined and forms a ball.

  3. Form Balls: Use your hands to roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

  4. Prepare Coating Mixture: In a shallow dish, mix peanut butter and cocoa powder until smooth and well combined.

  5. Coat Bliss Balls: Roll each bliss ball in the peanut butter mixture to coat evenly, then roll in desiccated coconut until fully coated.

  6. Chill: Place the coated bliss balls back on the baking sheet and refrigerate for at least 30 minutes to set.
