Ingredients

2 cups glutinous rice
1 cup coconut milk
3/4 cup brown sugar, packed
1 tablespoon butter
1 teaspoon vanilla extract
Pinch of salt
For Toppings:
Shaved ice or crushed ice
Sweetened evaporated milk
Sliced bananas
Jackfruit strips
Purple yam (ube) jam

Instructions
Prepare the Biko: Rinse glutinous rice until water runs clear and drain well. In a large pot, combine the rinsed rice with coconut milk, brown sugar, butter, vanilla extract, and salt. Stir to mix.
Cook the Rice Mixture: Bring the mixture to a boil over medium heat, then reduce to low. Cover and let it simmer for about 20-25 minutes, or until the liquid is absorbed and the rice is tender. Stir occasionally to prevent sticking.
Bake the Biko: Preheat your oven to 350°F (175°C). Transfer the cooked rice mixture into a greased baking dish, spreading it evenly. Bake for 15-20 minutes, or until the top turns golden brown.
Assemble the Halo-Halo Biko:
- In serving glasses or bowls, layer shaved ice or crushed ice at the bottom.
- Slice the baked biko and arrange slices on top of the ice.
- Add your choice of toppings such as sliced bananas, jackfruit strips, purple yam jam, pudding (if using), chopped peanuts, jellied coconut, and sweet corn kernels.
