Ingredients
- 2 cups full-fat milk
- 1 cup heavy cream
- 1/3 cup condensed milk
- 6 green cardamom pods, crushed
- A pinch of saffron threads, soaked in 2 tablespoons warm milk
- 1/4 cup chopped pistachios (plus more for garnish)
- 1/4 cup slivered almonds (optional)
Instructions
Prepare the Flavor Base: In a heavy-bottomed saucepan, combine the full-fat milk and heavy cream. Bring to a gentle simmer over medium heat, stirring occasionally to prevent sticking.
Infuse with Aromatics: Add the crushed cardamom pods and saffron along with its soaking liquid to the milk mixture. Reduce the heat to low and let it cook for about 20 minutes or until the mixture reduces by half, stirring frequently.
Sweeten and Thicken: Stir in the condensed milk and continue cooking for another 5-7 minutes, or until the mixture thickens enough that a line forms when you draw your finger through it on the back of a spoon.
Add Nuts: Remove from heat and stir in the chopped pistachios (and almonds if using). Let the mixture cool to room temperature.
Transfer to Molds: Pour the kulfi mixture into kulfi molds or small paper cups, then insert a popsicle stick or skewer into each one. Cover with plastic wrap.
Freeze: Place in the freezer for at least 4 hours, or until completely set.
Serve: Run a knife around the edges of the molds to loosen and unmold onto serving plates. Garnish with additional chopped pistachios before serving.
