Shakshuka is a beloved Israeli staple that captures the essence of comfort food. Instructions

  1. Prepare the Base: In a large skillet or sauté pan, heat olive oil over medium heat. Add onion and garlic, cooking until softened and fragrant, about 5 minutes.

  2. Add Vegetables and Spices: Stir in red bell pepper, cumin, paprika, cayenne (if using), salt, and black pepper. Sauté for an additional 3-4 minutes until the vegetables are tender.

  3. Incorporate Tomatoes and Lemon Juice: Pour in canned tomatoes with their juices. Use a spoon to break up the tomatoes into smaller pieces. Add lemon juice and bring the mixture to a simmer. Let it cook uncovered for about 10 minutes, stirring occasionally, until the sauce thickens slightly.

  4. Create Egg Wells: Using the back of a spoon, make six small wells in the tomato mixture. Crack an egg into each well, being careful not to break the yolks.

  5. Poach Eggs: Cover the pan and let it cook on low heat for 8-10 minutes, or until the eggs are cooked to your desired doneness. The whites should be set while the yolks remain runny.

  6. Garnish and Serve: Remove from heat and garnish with freshly chopped cilantro or parsley. Serve hot directly from the pan, accompanied by warm pita bread or crusty baguette slices for dipping.
