1 boneless leg of lamb (about 2.5 kg or 5.5 lbs)
4 cloves garlic, minced
Zest and juice of 1 lemon
3 tablespoons olive oil
2 teaspoons fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
Salt and freshly ground black pepper, to taste

500g (about 1 pound) frozen peas
50g (about 1.75 ounces) unsalted butter
2 tablespoons fresh mint leaves, finely chopped

Instructions
Prepare the Lamb Roast: Preheat your oven to 200°C (400°F). In a small bowl, combine minced garlic, lemon zest, lemon juice, olive oil, rosemary, thyme, salt, and pepper. Rub this mixture evenly all over the lamb roast.
Roast the Lamb: Place the seasoned lamb on a rack in a roasting pan. Roast for 20 minutes at 200°C (400°F) to sear the outside, then reduce oven temperature to 160°C (320°F). Continue roasting until the internal temperature reaches 60-65°C (140-150°F) for medium-rare, about 1 hour and 30 minutes. Let it rest for 20 minutes before carving.
Prepare the Minty Peas: While the lamb is resting, melt butter in a saucepan over medium heat. Add frozen peas and cook until heated through, about 5 minutes. Stir in chopped fresh mint leaves and season with salt and pepper to taste.
