Ingredients

For the Cake:
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cardamom
  • 3 large eggs, separated
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 1 tablespoon honey
  • A pinch of salt
For the Topping:
  • 2 tablespoons sesame seeds
  • Additional honey for drizzling

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a round cake pan with butter or line it with parchment paper.

  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, cardamom, and salt. Set aside.

  3. Beat Egg Whites: In a separate large bowl, beat the egg whites until stiff peaks form. Gradually add 1/4 cup of sugar while continuing to beat until glossy peaks are achieved.

  4. Mix Wet Ingredients: In another bowl, combine the egg yolks with the remaining 3/4 cup of sugar and beat until creamy. Stir in the melted butter and honey until well incorporated.

  5. Combine Mixtures: Gently fold the dry ingredients into the yolk mixture until just combined. Carefully fold in the beaten egg whites, maintaining as much airiness as possible.

  6. Bake the Cake: Pour the batter into the prepared cake pan, smoothing the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  7. Prepare Topping: While the cake is baking, toast the sesame seeds in a dry skillet over medium heat until golden brown and fragrant, about 3-4 minutes. Set aside to cool.

  8. Finish and Serve: Once baked, remove the cake from the oven and let it cool slightly before turning out onto a wire rack. Drizzle with honey and sprinkle toasted sesame seeds on top for garnish.
