Ingredients

  • 3 cups all-purpose flour
  • 1 packet (2¼ teaspoons) active dry yeast
  • 1 teaspoon salt
  • 1 cup warm water (about 110°F or 45°C)
  • ½ cup extra virgin olive oil, plus more for brushing
  • ¾ cup za’atar spice mix
  • ¼ cup sesame seeds

Instructions

  1. Activate the Yeast: In a small bowl, combine the yeast with warm water and let it sit for about 5 minutes until frothy.

  2. Mix Dry Ingredients: In a large mixing bowl, whisk together flour and salt. Make a well in the center and pour in the activated yeast mixture along with olive oil.

  3. Form Dough: Mix until a dough begins to form, then knead on a lightly floured surface for about 8-10 minutes until smooth and elastic. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

  4. Preheat Oven: Preheat your oven to 475°F (245°C). If you have a baking stone, place it in the oven now.

  5. Shape and Toppings: Punch down the dough and divide into small balls. Roll each ball out into thin circles on a floured surface. Brush each circle with olive oil and sprinkle evenly with za’atar spice mix and sesame seeds.

  6. Bake Manakish: Transfer the topped flatbreads onto a baking sheet or directly onto the preheated stone. Bake for 10-12 minutes, until golden brown and crispy at the edges.
