Ingredients

For the Rice Cakes:
  • 2 cups purple glutinous rice (malagkit)
  • 1 cup regular white rice
  • 2 tablespoons pandan leaves, thinly sliced
  • Salt, to taste
For Topping:
  • 1/4 cup shredded coconut meat
  • 3 salted eggs, peeled and halved
  • 1/2 cup sugar syrup (equal parts water and sugar)

Instructions

  1. Prepare the Rice: Soak both purple glutinous rice and regular white rice in separate bowls with enough water to cover them by about an inch. Let it soak overnight.

  2. Grind the Rice: Drain the soaked rice and grind them separately into a fine texture using a food processor or traditional stone grinder.

  3. Steam Preparation: Combine the ground rice, pandan leaves, and salt in a large mixing bowl. Mix well until evenly combined.

  4. Fill Bamboo Tubes: Traditionally steamed in bamboo tubes (bumbong), fill each tube with the rice mixture, leaving some space at the top for expansion during steaming.

  5. Steam the Rice Cakes: Place the filled bamboo tubes vertically over a steamer filled with boiling water. Cover and steam for about 30-40 minutes, or until cooked through and firm to the touch.

  6. Slice and Serve: Carefully remove from the bamboo tubes, slice into bite-sized pieces, and serve immediately.

  7. Prepare Toppings: While still warm, roll each piece in sugar syrup, then top with shredded coconut and salted egg halves.
