Maamoul Cookies with Dates

Ingredients
Dough
2 cups semolina flour
1/4 cup all-purpose flour
1/2 teaspoon ground cardamom
A pinch of salt
3 tablespoons unsalted butter, melted
1 tablespoon orange blossom water or rose water
Date Filling
1 cup pitted dates
2 tablespoons unsalted butter
1 tablespoon milk (or more if needed)
1 teaspoon ground cinnamon
Instructions
Prepare the Date Filling: In a saucepan, melt the butter over medium heat. Add the chopped dates and cook, stirring occasionally, until they soften and start to break down. Remove from heat and let cool slightly.
Blend Dates: Transfer the date mixture into a food processor or use a hand blender to puree until smooth. If the mixture is too thick, add milk one tablespoon at a time until it reaches a spreadable consistency. Stir in cinnamon and set aside.
Mix Dough Ingredients: In a large bowl, combine semolina flour, all-purpose flour, cardamom, and salt. Add melted butter and orange blossom water or rose water, mixing until the dough comes together into a soft ball.
Shape the Cookies: Divide the dough into small balls (about 1 inch in diameter). Flatten each ball into a disc using your hands. Place a teaspoon of date filling in the center of each disc, then fold and seal the edges to form a smooth shape resembling a dome or flower.
