Lussekatter: Swedish Saffron Buns

Ingredients
- 2 1/4 teaspoons active dry yeast
- 1/2 cup warm milk (about 110°F or 45°C)
- 3 tablespoons butter, melted and cooled slightly
- 1/2 cup granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon salt
- 1 tablespoon saffron threads, crushed
- 4 to 4 1/2 cups all-purpose flour, plus more for dusting
- Pearl sugar or coarse white sugar for topping
Instructions
Activate the Yeast: In a small bowl, combine yeast and warm milk. Let it sit until frothy, about 5 minutes.
Mix Wet Ingredients: In a large mixing bowl, whisk together melted butter, sugar, eggs, salt, and saffron until well combined.
Combine Dry and Wet Ingredients: Gradually add the flour to the wet mixture, mixing until a soft dough forms. Knead the dough on a lightly floured surface, adding more flour as needed, until it is smooth and elastic (about 8-10 minutes by hand or 5-7 minutes using a stand mixer).
First Rise: Place the dough in an oiled bowl, cover it with a damp cloth, and let it rise in a warm place until doubled in size, about 1 to 1 1/2 hours.
Shape the Buns: Punch down the risen dough and divide into 16 equal pieces. Roll each piece into a long rope (about 12 inches) and shape into an S or pretzel form by crossing one end over the other.
Second Rise: Place the shaped buns on a baking sheet lined with parchment paper, cover them lightly, and let them rise again until puffy, about 30 minutes to 1 hour.
Preheat Oven: Preheat your oven to 375°F (190°C).
