Ingredients

For the Dough:
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2.25 teaspoons) active dry yeast
  • 1 teaspoon salt
  • 3 tablespoons unsalted butter, melted
  • 1 large egg
  • 3/4 cup warm milk
For the Coconut Filling:
  • 2 cups shredded coconut
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter, softened

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the flour, sugar, yeast, and salt. Add the melted butter, egg, and warm milk. Mix until a dough forms.

  2. Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, or until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size (about 1 hour).

  3. Prepare the Coconut Filling: In another bowl, mix together the shredded coconut, sugar, flour, and softened butter until well combined.

  4. Shape and Fill Buns: Punch down the risen dough and divide into 12 equal pieces. Roll each piece into a ball, then flatten slightly with your hand. Place about 2 tablespoons of the coconut filling in the center of each flattened dough ball, fold over to enclose the filling, and pinch to seal. Shape each bun into a round shape.

  5. Second Rise: Place the filled buns on a baking sheet lined with parchment paper, leaving some space between them. Cover with a damp cloth and let them rise again until puffy (about 30-45 minutes).

  6. Preheat Oven and Bake: Preheat your oven to 350°F (175°C). Brush the tops of the buns with a beaten egg for a golden finish. Bake in the preheated oven for 15-20 minutes, or until they are golden brown.

These Caribbean Coconut Buns are the perfect way to bring a taste of island paradise into your kitchen. Whether enjoyed fresh out of the oven or toasted lightly for breakfast, their sweet coconut filling and soft texture make them irresistible. Enjoy these buns with a hot beverage, and let the flavors take you on a tropical journey!
