Ingredients

For the Sambusa Dough:
  • 2 cups all-purpose flour, plus extra for dusting
  • 1 teaspoon salt
  • 3/4 cup warm water
  • 2 tablespoons vegetable oil
For the Filling:
  • 1 lb chicken breast, cooked and shredded
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cardamom powder
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine flour and salt. Gradually add warm water and oil, mixing until a dough forms. Knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for at least 20 minutes.

  2. Make the Filling: Heat oil in a pan over medium heat. Sauté onion, garlic, and ginger until fragrant. Add cumin, turmeric, paprika, cardamom, salt, and pepper. Stir well, then add shredded chicken. Cook for another 5 minutes, ensuring everything is well combined.

  3. Assemble the Sambusas: Divide dough into small balls. Roll each ball into a thin circle. Place about 2 tablespoons of filling in the center, fold over to form a half-moon, and seal edges by pressing with a fork or your fingers.

  4. Fry the Sambusas: Heat oil in a deep pan until hot but not smoking. Fry sambusas in batches for 3-5 minutes per side, or until golden brown. Drain on paper towels to remove excess oil.
